Homemade Hummus Recipe

I have adapted this recipe from The Barefoot Contessa Cookbook.

Ingredients:

2 cups chickpeas (garbanzo beans), drained

1 1/2 tsp Real Salt

4 garlic cloves, minced

1/3 cup tahini (sesame paste)

6 TBS fresh squeezed lemon juice (from 2 lemons)

2 TBS olive oil

8 dashes Tabasco sauce

Instructions:

Place all ingredients into blender or food processor and puree. Taste for seasoning and chill before serving.

Snack Attack: What We Eat at Snack Time

This week I thought you might like to know what snack options my kids have. I try to change it up each week. Here's what's on our menu for this week. I actually plan our snacks for the week and post the list of options on the fridge. That way, my kids have a choice and I don't have to hear, "Mom, there's nothing to eat!" When my kids have options and at least a few things they enjoy, they are much more likely to make healthy choices!

Here's what's on my list:

Air popped popcorn with butter,
Real Salt and nutritional yeast.

Luna bars. *some of them have added sugar and I stay away from those.

Hummus with fresh cut up veggies. I make my own because most of them have canola oil. If you can find one made with cold pressed olive oil, then store bought is fine. (Let me know below if you have a favorite brand.)

Kale chips.

Rice crackers with raw, organic cheese. Trader Joe's carries a great raw cheddar, though it's not organic.

Apples with nut butter.

Hard-boiled eggs.

Organic, Greek yogurt with fresh or frozen fruit or berries. You can even make a puree with raw honey, water, a pinch of salt and fruit blended in the blended.

I take some time on Sunday afternoon and make up everything needed for the week or I do a little after dinner during the week if I run out of time on the weekend.

20 of My Favorite Snacks to Stay Slim, Healthy, and Vital

For some reason, finding healthy snacks seems daunting to many, even me at times. So,
I jotted down my top 20 favorite healthy snacks on the run. Comment below to let me
know what you munch on between meals.

*1 ounce of raw milk cheese with some apple slices

*Celery with nut butter

*Whole milk, live culture yogurt with blueberries

*Carrots and hummus

*Guacamole with carrots, jicama and celery

*Pumpkin seeds, walnuts
or any other nut or seed with a piece of fruit

*Trail mix with unsweetened,
dried fruit, shredded coconut and dark chocolate chips

*My homemade almond seed crackers with
raw milk cheese

*Bone broth with beef gelatin and any veggies such as
zucchini, cauliflower, onion, greens, carrots, celery, parsely, green beans,
broccoli, etc... ( I usually choose three and make 4 qt. of soup at a time with
2 cups broth and water to fill pot - cook 20 minutes on stove) blend into a
drink and sip warm!

*Green Smoothie

*Avocado with fresh lemon juice,
Celtic or Himalayan salt and cayenne to taste

*Organic, air popped popcorn
with organic or raw butter and good salt

*Glass of almond milk with stevia
and vanilla

*Raw milk

*Raw milk kefir

*Raw sauerkraut with olive oil,
good salt and dijon mustard

*Hard boiled egg with salt

*Beef jerkey from wild or
pastured meat and seasoned with good salt

*Leftovers from yesterday
